The course will cover the structure and function of proteins, their physical and chemical properties and methods for studying them. Topics include: the structure and properties of each of the twenty amino acids, the structure of proteins and the interactions that stabilize them, the driving forces behind aggregation and denaturation of proteins, as well as an overview of analytical techniques for the analysis and characterization of proteins in a processing environment.
